Roast Lamb with Lavender
3 cloves of garlic, crushed
1 tbsp lavender leaves, finely chopped
3 tbsp olive oil
900g lamb roasting joint
200 ml Marsala
2 tsp honey
1 tsp lavender flowers
1. Mix the garlic, lavender leaves and oil into a paste and season with salt an pepper. Rub the mixture over the lamb and leave to marinate for 2 hours or overnight.
2. Preheat the over to 200c (200c fan) / 415F / gas 7.
3. Roast the lamb for 25 minutes, then turn the over down to 190c (170c fan) / 375F / gas 5, pour over the Marsala and roast for a further 45 minutes.
4. Transfer the lamb to a warm plate and cover with a double layer of foil and a towel. Leave to rest for 15 minutes before carving. Stir the honey and lavender flowers into the pan juices and spoon over the top.
