Spice-Crusted Roast Pork

900g /2lb/Pork Shoulder Joint, boned and rolled

2 tbsp tahini paste

3 tbsp ras el hanout spice mix

3 tbsp olive oil


1. Preheat the oven to 230ºc (210ºc fan) / 450F / gas 8.

2. Brush the Pork with tahini, then roll in the spice mix to coat. Heat the oil in an ovenproof frying pan, then add the pork and baste with hot oil.

3. Transfer the pan to the oven and roast for 15 minutes.

4. Reduce the temperature to 180ºc (160ºc fan) / 350F / gas 4 and roast for 45 minutes, basting again halfway throught.

5. Cover the pan with a double layer of foil and leave the pork to rest for 10 minutes before carving.
